Portuguese Seafood Cataplana - 1st Try .....Brilliant

Cataplana is a Portuguese seafood dish, popular on the country's Algarve coast. It is also the name of the special cookware used to prepare the dish, which is traditionally made of copper and shaped like two clamshells hinged at one end and able to be sealed using a clamp on either side of the assembly.

 CATAPLANA

So Here is the recipe:
In Saute Pan-
EVOO( extra virgin olive oil)
Thin slice Onion & Fennel - sweat on low heat.
Add Garlic & Bell pepper,Salt ,pepper,Especiaria(Portuguese spice mix)
Then add Diced peeled tomatoes....cook then cover.....set aside.
Create Fish Stock (about 3/4 cup) add small amount of tomato paste - set aside
Nelsa bought some Creme de Marisco packet for this fish stock....you could also use clam juice.

Then in Cataplana:
EVOO & Garlic & Bay leaf...heat to combine flavors.
Cataplana transfers heat very quickly.....garlic should not burn!

Remove pan from Heat.
Now you start Layering the ingredient.
Start with Vegetable mixture.
Then add chopped Piri-Piri pepper.
Layer Fish,Shrimp and squid.
Add lemon wedges.
Sprinkle with cilantro & parsley.


 Add fish stock and 1/2 cup of white wine.


Close lid & lock Handles down.
Cook for 7 min on High Heat.
It will start steaming quick...and start to bubble at edges...you can sort of tell it is ready.

2007 Sterling Malvasia Bianca & Spicy Fire Grilled Shrimp

I first bought the 2001 Vintage of this wine. It was one of the best whites ever. For years I rationed the 6 bottles I purchased. Finishing the last before purchasing a case of this 2007 wine. It goes great Spicy food. The 2007 has a slightly bitter finish....but is still pretty good. But does not pair as easily with food as the 2001.

Grilled shrimp with Vodka marinated Pequin Peppers on a bed of Puerto Rican rice with fresh English peas and Cabbage.

This was a very delicious dish.
We made the sauce in small food processor.
Cilantro, Parsley,Garlic, Red Jalapeno,olive oil, sweet paprika, cumin , Lemon juice, salt & pepper.....

Syrah , Jack Ranch Vineyard , Edna Valley - Clone 383

A great Syrah with lots of charater and depth. The nose and taste are out of this world! One of the best Syrah we have had in a while....and we drink a lot of Syrahs and Shiraz. A great PQR wine. I think I paid like $20 -$25 a bottle. A solid 95 AMGP (AMG Points)
